【麻油鸡块】

上班族们可以试试这个菜。头一天晚上把鸡肉切块，拌上腌料放冰箱过夜。第二天下了班后，几分钟就可以炒出嫩滑入味的菜上桌。
用料:
1：去皮去骨鸡腿肉550克（Costco有卖），老抽酱油1大匙，生粉2茶匙，盐1/2茶匙，白胡椒粉1/6茶匙，水2大匙；
2：八角香油1.5大匙，姜3-4片，葱花1大匙；
3：厨用酒或米酒2大匙，头抽酱油1大匙，糖1/4茶匙，盐1/4茶匙，水2大匙；
4：香油1茶匙，炒熟白芝麻1茶匙。
注：1大匙=15毫升=1 Tablespoon，1茶匙=5毫升=1 Teaspoon，1杯=240毫升。
做法：
1、前一天晚上将鸡肉切块，加所有剩余1料，抓捏均匀（图1），保湿冰箱过夜。这样鸡肉会很嫩。
2、不粘锅，加1.5大匙香油，置炉上开大火，炒香剩余2料（图2），下鸡肉翻炒几下（图3）。
3、依次加入3料后炒至汁浓，最后下4料的芝麻和香油（图4），兜匀出锅。
