【Salt and Pepper Egg Tofu】

Crunchy outside and soft inside, very delicious.

Level: Low
Serves: 3 servings
Ingredients:
1) 1 package egg tofu (245g);
2) ¼ cup sweet potato starch (or tapioca starch);
3) 2.5 tbsp olive oil, 2 tsp sweet potato starch (or tapioca starch), 1/4 tsp salt, ¼ tsp ground Sichuan pepper, 1 tbsp freshly chopped green onion.
Directions:
1: Cut egg tofu into 0.6-cm thick rounds (Picture1), and coat both sides with a thin layer of sweet potato starch (Picture 2). You can buy sweet potato starch from local Asian markets (Picture 3).
2: Heat 2 tbsp oil in a non-stick sauté pan over medium-high heat. Pan fry tofu until golden brown, for about 3-4 minutes (Picture 4). Carefully turn them over and cook for another 3 minutes (Picture 5). Transfer pan fried tofu rounds to a plate and set aside.

3: Heat 0.5 tbsp oil in the same non-stick sauté pan. Add 2 tsp sweet potato starch, stir and cook for 2 minutes. Add salt and pepper powder of Ingredient 3), and cook for 1-2 minutes (Picture 6). Sprinkle 1 tbsp chopped green onion and sauté for 30 seconds (Picture 7). Put back tofu rounds and gently toss to coat evenly with salt, pepper and green onion (Picture 8).
4: Transfer to a serving plate and serve immediately.
