【Winter melon meat balls】

Very delicious and healthy dish, my family loves it.

Cook time: 10 minutes

Serves: 6
Ingredients:
1) 1200 g winter melon;
2) 300g extra lean ground pork;
3) 1-2 shallots (80g);
4) ½ tsp salt, 1/6 tsp ground black pepper, 1/6 tsp ground Sichuan peppercorn, 2 tsp corn starch, 2 tsp sesame oil, 1 tbsp premium soy sauce, 2-3 tbsp water;
5) 1.5 tbsp avocado oil or other cooking oil, 2 tbsp dried shrimps, 1 tbsp chopped green onion, 3 g ginger sliced;
6) 1 tsp salt, 1 tbsp premium soy sauce, 1/4 tsp ground black pepper, 1/4 tsp chicken broth mix, ½ cup water;
7) 1 tsp sesame oil.
Directions:
1: Peel off skin of winter melon, remove seeds rinse with water then dice into 2x2x0.3 cm pieces (Picture 1). Remove skin of shallots, rinse with cold water and then chop finelly. Place in a bowl (Picture 2), add minced pork and all ingredients of Ingredient 4) (Picture 3), stir in one direction for another 2 minutes, until well mixed (Picture 4).

2: A non-stick deep saute pan on medium-high heat, add 1.5 tbsp cooking oil, sauté dried shrimps, sliced ginger and chopped green onion (Picture5) for 30 seconds. Add sliced winter melon sauté for another 1 minute (Picture6).

3: Add all ingredients of Ingredient 6) (Picture7), stir to mix. Cover with a lid and cook on medium heat for about 3-5 minutes (Picture8). Open the lid, stir a few times and move the melon pieces to one side. Quickly spoon out about 2 tsp meat mixture and shape it in your palm until it forms a ball. Gently drop meatballs into the pan (Picture9). Cover the lid and cook for another 1.5 minutes.
4: Open the lid, added 1 tsp chopped green onion and 1 tsp sesame oik, (Picture10), stir to mix. Transfer to a serving bowl. Serve with some steamed rice, yummy.
