【Cherry tomato Shrimp Egg Stir Fry】

Costco’s cherry tomatoes are very sweet, I used them to make this stir fry, wonderful.

Prepare time:10 minutes
Cook time: 6 minutes
Level: low
Serves: 6 serving
Ingredients:
1) 30 medium size frozen deveined white shrimps, 1/2 tsp salt, 1/6 tsp ground white pepper, 1 tsp corn starch, 1/2 tsp sesame oil;
2) 20 cherry tomatoes;
3) 3 extra large eggs, 1/2 tsp salt, 1/6 tsp chicken broth mix , 1 tbsp water;
4) 2 tbsp Avocado oil, 2 tbsp freshly chopped green onion;
5) 1 tsp premium soy sauce, 1/8 ground black pepper, ½ tsp brown sugar;
6) 1 tsp sesame oil.
Directions:
1: Place shrimps in the sink filled with cold water to thaw, remove shells, rinse and drain well. Combine shrimps with all the rest ingredients of Ingredient 1) in a bowl (Picture 1), mix well and massage for a minute, set aside for 10 minutes.
2: Place all ingredients of Ingredient 3) in a bowl, beat well set aside. Rinse cherry tomatoes in water and cut in half (Picture 2), set aside. Non-stick sauté pan on medium-high heat, add 1 tbsp olive oil, sauté shrimps (Picture 3) for a couple of minutes and transfer to a plate.

3: Add another tbsp oil to the pan, sauté chopped green onion for 30 seconds (Picture 4), add cherry tomatoes and all ingredients of Ingredient 5), sauté for a minute (Picture 5).
4: Pour in beaten egg mixture (Picture 6), cook for 30 seconds (Picture 7), add previously cooked shrimps, gently stir and cook until egg solidify (Picture 8) and shrimps are just cooked, about 1 minute. Add ½ tsp sesame oil, gently stir a few times, transfer to a serving plate and serve.
