【AirGo-eggplant and minced pork】

I used AirGo’s“Air Fryer” function to make this delicious dish with only 1 tbsp oil, easy and healthy dish. To purchase go to: AirGo cooker, with a coupon of maomao25 for $25 off.

Serves: 4 servings
Ingredients:
1) 1) 4 Chinese eggplants (600g);
2) 200g extra lean ground pork, 2 tbsp freshly chopped green onion, ½ freshly minced ginger, 1/3 tsp salt, 1 tsp sesame oil , 1/6 tsp chicken broth mix, 1/8 tsp thirteen ground spice or white pepper powder, 1 tsp corn starch, 2 tbsp cold water;
3) 1 tbsp avocado oil or other cooking oil, ¼ tsp salt, 1 green onion finely chopped, 3 clove garlic minced, 1 tbsp fermented black bean;
4) 1 tbsp premium soy sauce, 1 tbsp soy sauce paste.
Directions:
1: Trim stem off from the eggplants. Rinse and cut into small pieces (Picture 1). Soak eggplants in cold water with 2 tbsp white vinegar. Combine all ingredients of Ingredient 2) in a bowl and stir in one direction for a few minutes with a pair of chop stickers until the mixture is sticky, set aside.
2: Plugin the 【AirGo】cooker, use “Function” to select the “Air Fryer” program, set temperature to 420F and time to 10 min. press “start” to initiate the program. After preheat is done, add 1 tbsp cooking oil, eggplants and 1/4 tsp salt (Picture 2), stir a few times. Close the lid and let the program continue.

3: After cooking about 6-7 minutes (when beeping), open the lid, add all ingredients of Ingredient 3) stir a few times (Picture 3), and then close the lid, let the program continue.
4: When only 2 min. cooking time left, open the lid, all ingredients of Ingredient 4) (Picture 4) and stir a few times. Close the lid and let the program to finish.
5: When the program ends, transfer cooked eggplants and minced pork to serving plate and serve warm with steamed rice.
