虾肉珍珠丸

用一半虾肉和猪肉馅来做珍珠丸,非常鲜美。毛毛一口气吃了5个。

用料:
1:冰冻带壳白虾半包300克,去肠,去壳洗净沥水备用。
2:瘦猪肉馅200克(extra lean ground pork)。
3:葱花1.5大匙,姜末1茶匙,绍酒1.5茶匙,白胡椒粉1/6茶匙,盐1/2茶匙,香油1大匙,生粉1大匙,糖1/4茶匙,鸡精1/4茶匙,水2大匙。
4:糯米2/3杯。
注:以上料共做16个虾肉珍珠丸。
做法:
早晨上班前将糯米洗净放入水1.5杯泡上(图A),大约泡8-9小时。将虾肉切小小丁(图B),然后放入所有2和3料(图C)拌匀,用筷子搅拌上劲(图D)。
用小勺沾下水,取大约1.5大匙馅,在左手掌和勺间做成球状(图E),放入滗去水的泡好的糯米里(图F),均匀沾上一层糯米放到小块烤盘纸上(图G)放入蒸锅。水开大火蒸15分钟即可。
