【Scallion egg Bing】

You can use of AirGo “Crepe/Nann” function to make delicious scallion egg Bing easily. To purchase, go to: AirGo cooker, with a coupon of maomao25 for $25 off.

Ingredients:
Dough:
1) 2 cups unsifted all-purpose flour (320g);
2) 2/3 cup+2tsp boiling water (170g), 3 tbsp cold water (45 g);
3) 1 tbsp corn oil or avocado oil;
Oil paste:
4) 3 tbsp unsifted all-purpose flour (30g), 2.5 tbsp corn oil (30g), 1 tsp salt, 1/4 tsp chicken broth mix, ¼ tsp thirteen ground spice (optional);
Others:
5) 2 green onions, roots removed, rinsed and finally chopped;
6) 2 large egg, 1/3 tsp salt;
7) 4 tbsp avocado oil or other cooking oil for pan fry Bing.
Directions:
1: Dough: Pour boiling water into the Ingredient 1) flour in a bowl while stirring, then add cold water and stir to mix (Picture 2). Add 1 tbsp oil, knead for a minute to form a smooth dough. Spread ½ tsp corn oil on the dough and cover with a damp cloth or plastic wrap (Picture 2) and set aside in a warm place for 2 hours.
2: Oil paste: Combine all ingredients of Ingredient 4) in a small container, mix well with a spoon (Picture 3) and set aside.
3: On a lightly oiled working surface, divide dough into 4 equal portions. Roll out each portion into a rectangle about 1 mm thick, smooth on 1/4 of oil paste (Picture 5) and spread evenly. Fold from left to right to form a roll (Pictures 6). Stand it up and press done a bit, cover with food wrap to rest for 20 minutes (Pictures 7). Meanwhile, combine ingredients of Ingredient 5)-6) and beat well (Pictures 8).
4: Plugin the 【AirGo】cooker and turn on the power. Use “Function” to select the “Crepe/Nann” program, set 400F and 25 min., and then press start. Press down the dough and roll out into a 22 cm circle (Pictures 9). When the preheating is done, add 1 tbsp oil to the pot and place the Bing inside (Pictures 10). Close the lid and let it cooked for 1-2 minutes. Meanwhile prepare the second Bing.
5: Open the lid, add ¼ egg mixture over the top (Picture 11) and let it cook for another minute (Picture 12), turn over the flatbread, close the lid and cook for another minute.
6: Take out the Bing and repeat for the rest. Serve warm.
