【AirGo-Shallot flat bread】

Ingredients:
Dough:
1) 4 small shallots (120g);
2) 1 cup – 2 tsp lukewarm water (230g), 1/3 tsp sugar, 1.5 tsp fast rising yeast;
3) 1 cup unsifted all purpose flour (160g), 1 cup whole wheat flour, ¼ tsp salt;
4) 1.5 tbsp olive oil;
Topping:
5) 1 tbsp olive oil.
6) 1/6 tsp ground black pepper, 1/2 tsp sea salt, 1.5 tbsp olive oil.
Directions:
1: Remove skin of shallots, rinse with cold water and then chop finely (Pictures 1). Plugin the 【AirGo】cooker, use “Function” to select the “Airfryer” program, set temperature to 400F and time to 8min. press “start” to initiate the program. Add chopped shallots and 1 tbsp olive oil, stir to mix. Cover the lid and let the program continue. After cooking time only have 3 min. left, open the lid and stir to mix (Picture 2). Close the lid and let the program finish. Take out Air fried shallots and set aside.
2: Dough: place all ingredients of Ingredient 2) in a container, mix well and let it stand for 5 minutes. Measure flour and salt of Ingredient 3) in a medium size bowl. Pour the yeast water mixture to flour to form soft dough. Add 1 tbsp olive oil and knead the dough for about 5-8 minutes until smooth and elastic (Picture 3). Rub 0.5 tbsp olive oil on the top, cover (Picture 4) then set aside in a warm place.

3: When the dough doubles in volume (Picture 5), brush the Airgo pot with 1 tbsp olive oil. Place the dough inside the pot and press it out to cover the entire bottom (Picture 6). Sprinkle evenly all ingredients of Ingredient 6) on top and drizzle 1.5 tbsp olive oil (Picture 6). Cover the lid (Picture 7) and let it stand for 45 minutes until double in size.
4: Plugin the 【AirGo】 cooker, use “Function” to select the “Oven” program, set temperature to 400F and time to 18min. press “start” to initiate the program. After cooking time only have 4-5 min. left, open the lid, turn over the bread (Pictures 8). Close the lid and let the program finish.
6: When it is done, cut and serve immediately.
Tips:
Microwave leftover bread 15-25 seconds then toast it before serving.
