【Curry potatoes 】

I made curry potatoes for Maomao, and surprisingly, he loved it.

Prepare time: 15 minutes
Cook time: 15 minutes
Level: Low
Serves: 3 servings
Ingredients:
1) 3 medium potatoes (450g);
2) 2 tbsp olive oil, 1/2 tsp salt, 1/4 tsp ground black pepper;
3) 1 tbsp chopped green onion;
4) 1 tsp curry powder ;
5) 2 tbsp water.
Directions:
1: Peel off potato skin (Picture 1), rinse and pat dry with a paper towel. (You can leave the skin on if you prefer). Cut each potato in 3 equal portions lengthwise then cut into 3-4 equal-size cubes (Picture 2).
2: In a non-stick sauté pan, add 2 tbsp oil and potato cubes (Picture 3) and cook on high heat for about 4-5 minutes until the side turns golden brown. Turn over cook for 3-4 minutes again for each side (Picture 4).

3: Add salt and ground black pepper (Picture 5), gentle stir a few times. Add chopped green onion (Picture 6) and curry powder (Picture 7), stir and cook for 30 seconds.
4: Add 2 tbsp water (Picture 8), stir to mix and cook until water evaporates. Transfer curry potatoes to a serving plate before serving.
