【Braised roast beef with tomatoes】

This is one of Maomao’s favorite dishes, very tasty!

Prepare time: 10 minutes
Cook time: 28 minutes
Stand time: 10 minutes
Level: low
Serves: 8 servings
Ingredients:
1) 1200g roast beef;
2) 375g tomatoes;
3) 1 tbsp olive oil, 2 green onion root removed, washed and chopped into 1 in pieces, 10 g ginger sliced;
4) 1.5 tbsp ketchup, 2 tbsp light soy sauce, 1 tbsp premium soy sauce, 2 tbsp dark soy sauce, Monk fruit sugar, 1/4 tsp salt.
Directions:
1: Wash beef in cold water and then drain. Dice beef into 10x4x4 cm pieces. Wash tomatoes and cut into pieces.
2: In a large non-stick pot, add 1 tbsp oil, chopped green onion and sliced ginger on high heat sauté for 20 seconds. Add beef cubes, sauté for a few minutes until light brown.

3: Add diced tomatoes, saute for a minute, and transfer all contents into InstantPot. Add all ingredients of Ingredient 4), close the lid. Select Max pressure for 28 minutes or high pressure for 35 minutes.
4: When the InstantPot program is done, wait another 10 minutes. Slowly release the pressure then open the lid, take out and serving warm.
