【Carrot Shrimp Patties】

This Carrot Shrimp Pattie is not deep fried but pan fried with little oil, very tender and juicy in side, popular appetizer at a party.

Cook time: 6-8 minutes /batch
Level: low
Serves: 4 patties /serving and a total of 16 patties
Ingredients:
1) 1 package frozen deveined white shrimps (454g);
2) 2-3 baby carrots (100g), 2 green onion, 2 Shallots (80g);
3) 1 extra large egg, 1/3 tsp salt, 1/4 tsp chicken broth mix, ¼ tsp ground black pepper, 2 tsp premium soy sauce;
4: 1 tbsp corn starch, 3 tbsp all purpose flour (40g);
5: 1 tsp sesame oil;
6: 2 tbsp avocado oil or other cooking oil.
Directions:
1: Place shrimps in cold water to thaw (Picture 1), remove shells, rinse with cold water, massage for a minute, drain well and dice (Picture 2). Peel off skin of carrot, rinse and then dice finely. Remove skin of shallots, rinse with cold water, then chop into small pieces. Remove root of green onion, rinse with cold water, and then chop finely. Place them in a container (Picture 3).
2: Add diced shrimp and all ingredients of Ingredient 3)-5) (Picture 4), mix well and set aside (Picture 5).

3: Heat 2 tbsp oil in a large non-stick pan at medium-low heat (3), add each of 2 tbsp batter at a time and space out. Cook for 3-4 minutes until golden brown. Then turn over. Cook for another 2-3 minutes until golden brown (Picture 6).
4: Take out the patties, serve warm, very yummy.
