【Scallion Twisters】

I used AirGo “Crepe/Nann” function to make this delicious Scallion Twisters. It is soft inside and crispy outside with little cooking oil, very tasty. To purchase, go to: AirGo cooker, with a coupon of maomao25 for $25 off.

Cook time: 15 minutes

Ingredients:

Dough:
1) 2 cups unsifted all-purpose flour (320g), 1.25 tsp baking powder, mix well;
2) 1 cup minus 2.5 tbsp luckwarm water (200-210 g), 1/4 tsp sugar, 1.25 tsp fast rising yeast ;
3) 2 tsp corn oil or avocado oil;
4) 1.25 tsp salt, 1 tbsp sesame oil, 1/4 tsp chicken broth mix, 1/4 tsp thirteen spice powder or black ground pepper, 1-2 tsp chili powder (optional)
5) 3 green onions, roots removed, rinsed and finely chopped;
Others:
6): 1.5 tbsp avocado oil or other cooking oil for frying bread;
7) 1/3 cup water (80g).

Directions:
1: Dough: Combine flour and baking powder in a medium sized bowl and mix well (Picture 1, left). Mix all ingredients of Ingredient 2) in a container and let stand for 10 minutes (Picture 1, right). Pour the yeast water mixture into the flour mixture, and combine to mix (Picture 2). Add 2 tsp oil, then knead for a minute (Picture 3). Cover with a damp cloth or a lid and set aside in a warm place until it doubles in volume (Picture 4).

2: Gently knead the dough for a few times and form a log. Press down and roll out the dough into a 0.3-cm thick rectangle (Picture 5). Drizzle 1 tbsp sesame oil and brush evenly, then scatter salt, chicken broth mix, black ground pepper and chili power evenly over the top. Fold in half from left to right and top to bottom a few times to distribute them evenly. Scatter chopped onion over the top (Picture 6).
3: Fold from bottom and top ¼ to the center and then fold half. Cut into 18 equal portions (Picture 7). Stack one piece over another one, press down with a chopstick, hold both ends and twisted a few times (Picture 8). Repeat for the rest. Add 1.5 cooking oil to the pan of 【AirGo】cooker, brush evenly, arrange all twisted bread evenly (Picture 9) and cover with the lid and let it standard for 45-60 minutes, until double in size (Picture 10).

4: Plugin the 【AirGo】cooker and turn on the power. Use “Function” to select the “Crepe/Nann” program, set 400F and 15min., and then press start (Picture 11).
5: Cooking about 5 minutes, open the lid and add 1/3 cup water. Cover the lid and let the program continue. When cooking about 10 min. or when it is beeping or to reminder flapping, open the lid, turn over the twisters (Pictures 12), close the lid and let it continue cook.
6: When the program is over, take out the cooked Scallion twisters. Serve warm.
