辣油凉粉

南京的辣油凉粉是我喜欢的。
用料:
1:纯绿豆淀粉1/2杯。水3.5杯。
2:香菜2根,洗净切碎。
3:蒜末1茶匙,葱花1茶匙。
4:盐1/2茶匙,糖1/2茶匙,鸡精1/4茶匙,万字牌生抽酱油2大匙,老干妈辣椒酱1大匙,冷开水2大匙,香油1大匙,辣油1大匙。
5:橄榄油2茶匙。
做法:
中号饭锅内放1料,拌匀。置炉上开中火,边搅拌边煮至半透明。离火冷凉。
凉透的凉粉,到出切0.5厘米的长条。炒锅内放2茶匙橄榄油,置炉上开中火炒香1茶匙蒜末,葱花后,离火。稍冷后加入2和4拌成汁。然后拌入切好的凉粉。
