风鸡腿

这个菜过去做过，那次用的是花椒粒炒盐，自从买到很香的花椒粉，发现用花椒粉更好。正好两个礼拜前Farm Boy 大鸡腿On Sale才0.99$/磅，加上天气还偏冷，就买了一大盘大鸡腿回来，做风鸡吃。
用料:
1：大鸡腿8只2680克，洗净沥水备用。
2：花椒粉2大匙，海盐5大匙。
3：葱一条切段，姜3-4片。 做法：花椒粉与盐拌均匀（图A），均匀涂抹到鸡腿上（图B），放入密闭盒里冰箱里腌3-4天，间中翻翻。
然后用棉线绳将鸡腿梆起（图C），放阴凉通风处晾5-7日至外皮干爽（图D）。取两只风干的鸡放入水中泡（图E）3小时，洗净鸡腿放入盛葱段和姜片的盘里，入笼大火蒸20分钟（图F），冷后斩块即可食用。
