Ingredients:

Dough:
1) 2+1/4 cups unsifted all-purpose flour (360g);
2) ¾ cup +2 tbsp, warm water;
3) 1 tsp avocado oil or other vegetable oil;
Filling:
4) 650g daikon;
5) 1 piece tofu (175g), 2 tsp avocado oil;
6) 1 small package (34g) dry mung bean vermicelli;
7) 2 green onion, ¾ tsp salt, ¼ tsp Thirteen spice powder, 1 tbsp sesame oil, 1 tbsp chili oil, ¼ tsp chicken broth mix;,
Others:
8) 3 tbsp avocado oil or other cooking oil.

Directions:

1: Dough: Measure out flour into a medium sized bowl. Slowly stir in water and continue to stir with chopsticks until it is well combined (Picture 1). Add 1 tsp oil and continue kneading until the dough is smooth, about 2 minutes (Picture 2). Cover with a damp cloth and let it stand for 45 minutes.
2: Meanwhile, soak mung bean vermicelli in hot water for 15 minutes, drain and cut to 1 cm long pieces. Peel off skin of daikon, shred, add ¼ salt, mix well and let it stand for 10 minutes (Picture 4). Then squeeze out water of the daikon shreds, set aside. Slice tofu, and air fry the tofu slices with 【AirGo】’s “Air Fryer” program using temperature 415F and time 15 min. After preheat, open the lid, brush the pot with 2 tsp oil, arrange tofu pieces inside the pot (picture 5), then close the lid. Upon beeping, turn over the tofu pieces. When it is done, cut tofu into small pieces.

3: Cut green onion finely, combine all ingredients of Ingredient 4-7) (Picture 6) and mix well (Picture 7). On a floured working surface, Shape each portion into a log about 2 cm in diameter. Cut into 30 equal sized portions (Picture 8). Press with your palm to flatten them. Roll out each disc into a 12 cm circle (Picture 9). Place 3 tbsp filling (Picture 10), cover with another wrapper (Picture 11) and seal it (Picture 12).
4: When you are done with the first 5 daikon pockets, Plugin the 【AirGo】cooker, use “Function” to select the “Crepe/Naan” program, set temperature to 400F and time to 15 min. press “start” to initiate the program. Open the lid, brush the pot with 1 tbsp oil, arrange 5 daikon pancakes inside the pot (picture 13), then close the lid. While waiting, you can work on the rest of dough and fillings.

5: When only 5-6 min cooking time left (or upon when beeping), open the lid, turn over the pockets (picture 14), close the lid and let the program to finish.
6: When the program ends, open the lid, transfer cooked pancake to a serving plate and serve warm. Repeat for the second and third batch.
