“Golden sand” is just yolks of salted eggs that are mashed and stir fried into a unique sauce. When bitter melon is cooked in this sauce, the dish is not only beautiful but very tasty.

Ingredients:
1) 2 bitter melon 400g;
2) 3 cooked salted egg yolks;
3) 1.5 tbsp olive oil, 2g ginger sliced;
4) 1/6 tsp salt, ½ tsp sugar, 1/6 tsp chicken broth mix.

Directions:

1: Peel off bitter melon skin (Picture 1), cut the melons lengthwise in half and scoop out both the seeds and any pith (Picture 2). Cut into 4 mm strips (Picture 3), set aside.
2: Fill a non-stick sauté pan with cold water to about 80% full, on high heat and bring the water to boil. Add melon strips (Picture 4), and cook for a minute. Rinse the bitter melon strips with cold tap water (Picture 5) and then drain thoroughly..

2: Heat 1.5 tbsp olive oil in thenon-stick sauté pan over high heat, sauté sliced ginger (Picture 6) for a minute and remove the ginger slices.
3: Add salted egg yolks, mash the egg yolks (Picture 7) with spatula while stir and cook for 1-2 minutes (Picture 8).

4: Add melon strips, stir and cook for 1 minute (Picture 8). Then add all ingredients of Ingredient 4) (Picture 10) stir to mix well. Pour all onto a serving plate and serve immediately.
