【Bitter melon stir fry in chili bean and sweet flour paste sauce】

Very glad to find this fresh bitter melon in winter time, a great and tasty vegetable dish.

Cook time: 3-4 minutes
Level: low
Serves: 5 servings
Ingredients:
1) 2 bitter melon 525g (you can purchase in Chinese grocery store);
2) 1 tbsp olive oil or other cooking oil, 1 tbsp freshly chopped green onion, 2 tsp freshly minced garlic, 1tbsp Lee Kum Kee Guizhou style chili sauce, 1.5 tbsp sweet flour sauce;
3) 1 tbsp premium soy sauce, 1/4 tsp chicken broth mix (optional);
4) 1/2 tsp sesame oil.
Directions:
1: Peel off bitter melon skin, cut the melons lengthwise in half and scoop out both the seeds and any pith (Picture 1). Cut each half to quart, cut into 1 cm wide pieces (Picture 2), set aside.
2: Heat 1 tbsp oil in a saute pan over medium-high heat, add all ingredients of Ingredient 2) (Picture 3), then add bitter melon pieces, saute for about 2 minutes.

3: Add all ingredients of Ingredient 3 (Picture 4), stir to mix and saute for another minute.
4: Add 1/2 tsp sesame oil, mix well. Transfer to a serving plate and serve warm.
