Dried woodears and spirulina may be purchased from Chinese grocery store. I brought a package of spirulina while visiting China. Ingredients:
1) 800g baby back ribs;
2) 5 small dried Chinese mushrooms, 10g dried black Chinese fungus (or black woodears);
3) 20g dried spirulina;
4) 1.5 tbsp olive oil, 2 green onions washed and chopped to 1 inch long, 2-3 slices of ginger, 1 anise star, 2 cloves;
5) 1 tbsp cooking wine, 3/4 tsp salt, 1.5 tsp sugar, 1.5 tbsp light soy sauce, 1.5 tbsp premium soy sauce, 1.5 tbsp dark soy sauce;

Directions:

1: Ahead of time, soak dried mushrooms and black fungus in cold water for a couple of hours, rinse with water and drain. Soak dried spirulina (Picture 1) in cold water for an hour (Picture 2), rinse with water and drain, set aside. Remove membrane from the back of the ribs, wash and cut between bones into small pieces, rinse and drain.
2: Heat 1.5 tbsp olive oil in a non-stick sauté pan over high heat, sauté chopped green onion, sliced ginger, anise star and cloves for 30 seconds. Add pork ribs (Picture 3), stir and cook for 3-4 minutes until a little bit brown outside, add 1 tbsp cooking and remove from heat.

3: Transfer ribs to the inside InstantPot Smart pressure cooker(Picture 4), add all ingredients of Ingredient 5) and mushrooms and black fungus (Picture 5). Cover the lid and place the pressure valve to “Seal” position. Use smart phone InstantPot smart app, set high pressure and heating for 18 minutes, save the program and start (Picture 7).
4: When the program is done, release the pressure then open the lid, add spirulina (Picture 7). Cover the lid and place the pressure valve to “Seal” position, again through the app set high pressure and heating for 2 minutes, save the program and start.
5: When the program is done, release the pressure then open the lid (Picture 8), through the app set heating for 5 minutes to reduce the sause. Transfer to a serving plate and serve with some steamed rice, yummy.
