【Chenpi Chicken Wings】

Chenpi or chen pi is sun-dried tangerine peel used as a traditional seasoning in Chinese cooking and traditional medicine. I made this dish for my guests, and it was well received.

Serves: 8 servings
Ingredients:
1) Chicken drumettes 1250g;
2) 1.5 tbsp olive oil, Chenpi (dried tangerine peel) 3-4 pieces, 3-4 slices of fresh ginger, 2 green onion rinsed and cut into 2 inches long, 6-7 cloves garlic crushed, 1-2 star anise, 2-3 cloves;
3) 1.5 tsp cooking wine, 1 tbsp premium dark soy sauce, 1.5 tbsp light soy sauce, 3/4 tsp salt, 1.5 tbsp sugar, , ¼ tsp chicken broth mix, 2 tsp dark vinegar, 1 cup water;
4) 1 tsp sesame oil.
Directions:
1: Rinse chicken drumettes under cold water and pat dry. Heat 1.5 tbsp olive oil in a non-stick fry pan over high heat. Sauté all ingredients of Ingredient 2) for about 1 minute (Picture 1). Add chicken drumettes (Picture 2), stir and cook for 2-3 minutes.
2: Add all ingredients of Ingredient 3), stir and bring to a boil (picture 3). Cover with a lid and turn heat to medium-low. Simmer for 15-20 minutes, stir occasionally.

3: Remove the lid and turn heat to medium-high. Cook until the the sauce (Picture 4) is reduced to about 1/6.
4: Add 1 tsp sesame oil, stir then transfer chicken wings to a serving plate.
