【Pork and Snow Pea Stir Fry】

This mouth-watering stir fry dish combines the tender pork and snow peas in savoury sauce. What a great combination!

Ingredients:
1) 300g pork center loin, 1/3 tsp salt, 1.5 tsp corn starch, 1.5 tbsp water, 1 tsp dark soy sauce;
2) 160g snow peas;
3) 2 tbsp olive oil, 1 tsp freshly minced garlic, 1 tbsp minced fermented black beans, 1.5 tsp minced fresh ginger, 1 tbsp freshly chopped green onion;
4) 1 tsp cooking wine, 1/6 tsp salt, 1.5 tbsp water, ½ tsp sugar, 1.5 tbsp oyster sauce;
5) 1 tsp sesame oil.
Directions:
1: Cut pork loin into thin (about 1 mm) slices. Add the rest of Ingredient 1) (Picture 1) and mix well with fingers for 1-2 minutes. Set aside for 20 minutes (Picture 2). It tastes tender if the pork meat is marinated overnight in fridge.
2: Remove ends of snow peas and pull off the string. Rinse then chop to small pieces.
3: Heat a non-stick sauté pan over high heat for 1-2 minutes. When the sauté pan is hot, add 1 tbsp olive oil and immediately add the marinated pork (Picture 3). Stir fry for 1 minute until pork starts to change color. Remove from heat and transfer to a plate.

4: Place the same sauté pan over high heat. Add 1 tbsp oil and sauté the rest of Ingredient 3) for 30 seconds (Picture 4). Add snow peas and toss a few times. Add 1 tsp cooking wine and 1/6 tsp salt (Picture 5) and mix well. Add the rest ingredients of Ingredient 4), stir to mix.
5: Put in the cooked pork and cook for 30 seconds. Stir in 1 tsp sesame oil then transfer to a serving plate. Serve with rice, yummy.
