【Meat filling Tang Yuan – Glutinous Rice Balls with meat filling】

For Chinese New Year celebration, Chinese people often love to have this dish made with glutinous rice flour and sweet or meat filling. This year I made these Tang Yuan with meat filling, delicious.

Prepare time: 20 minutes
Cook time: 15 minutes
Level: Medium
Serves: 5 servings
Ingredients:
1) 45g extra lean ground pork;
2) 1 tsp chopped green onion, 1/3tsp premium soy sauce , 1/3 tsp light soy sauce, 1/3 tsp dark soy sauce, 1/8 tsp salt, 1/12 tsp ground white pepper, 1 tsp corn starch, 1/4 tsp sesame oil, 1/8 tsp chicken broth mix, 4 tsp water;
3) 2 cups glutinous rice flour (250g), 1 cup minus 1 tbsp warm water (225g);
4) 1 can chicken broth (410ml), 1.25 cups cold water (360g), 1/3 tsp salt,
5) 1 tsp chopped green onion.
Directions:
1: Combine all ingredients of Ingredient 1) to 2) in a bowl (Picture 1). Stir in one direction for 3 minutes with a wooden spoon, until the mixture becomes sticky (Picture 2).
2: Measure in 2 cups lutinous rice flour and 225 g warm water in a medium sized bowl (Picture 3) and knead to form dough (Picture 4). Divide the dough into 22 equal portions. Take one portion, indent with your thumb and shape it into a deep bowl and spoon in 1 tsp meat filling (Picture 5). Carefully work the dough up to cover the filling, seal the opening, and gently roll into a ball with your palms (Picture 6). Make sure the dough is not stretched too thin, otherwise the filling will leak out. Repeat the process to finish all 22 balls.

3: Fill a medium sauce pan with 5 cups water and bring to a boil. Put the glutinous rice balls in gently (Picture 7). When the water boils again, reduce heat to low and cook for another 10 minutes over medium-high heat.
4: Meanwhile, fill another small saucepan with all ingredients of Ingredient 4) and bring to a boil on high heat (Picture 8). Transfer the cooked glutinous rice balls into the serving bowls and fill with chicken both and scatter some chopped green onion. Sever immediately.
