【Shrimp in a bird nest】

This is a nice and not too difficult dish to make. It is a very attractive dish and also delicious.

Prepare time: 15 minutes
Cook time: 15 minutes
Level: medium
Serves: 4 servings
Ingredients:
1) 8 Jumb size frozen shrimp, ¼ tsp sale, 1/8 tsp finely ground white pepper, 1/2 tsp sesame oil;
2) 8 small size potatoes, 1/3 tsp salt;
3) 2 tbsp sweet rice flour, 1.5 tbsp finely chopped green onion, 1/6 tsp chicken broth mix, 1/8 tsp finely ground white pepper, 1/2 tsp sesame oil
4) 2.5 tbsp vegetable oil or olive oil;
Directions:
1: Soak frozen shrimps in cold water to defrost. Peel and devein the shrimp, rinse under cold water and drain well. Place shrimps in a bowl, add the rest ingredients in Ingredient 1) (Picture 1), mix well and set aside for 20 minutes.
2: Wash and peel the potatos (Picture 2). Cut into thin slices, stack them up and cut into thin matchstick-sized strips (Picture 3). Place potato strips in a bowl, add all the rest ingredients in Ingredient 2) mix well (Picture 4) and set aside.

3: Add rice flour to the potato strips (Picture 6), mix well. Add all the rest ingredients of Ingredient 3) (Picture 7) and mix well.
4: Non-stick sauté pan on medium heat, add 2.5 tbsp oil. Add potato mix in 8 equation potions and make each to a circle. Press one shrimp on each potato pancake (Picture 7). Cook for 3-4 minutes then turn over. Cook for another 2-3 minutes until shrimp is pink and just cooked.
5: Take out cooked sshrimp in a bird nest on paper towel and remove excess oil before serving.
