【Thai style chicken feet】

I know chicken feet are not popular here. But, this Thai style chicken feet dish is very different and unique, one bit will make you reach for more. It’s a cold dish and it will be wonderful to have this cold dish with a bottle of beer.

Prepare time: 10 minutes
Cook time: 12 minutes
Stand time: 24-48 hours
Level: Low
Serves: 6 servings
Ingredients:
1) 725g chicken feet;
2) 1 lemon skin and lemon juice from one lemon, ¼ purple onion sliced, 3 hot peppers seeds removed and sliced;
3) 4 cloves garlic sliced, 2 tsp salt, 1/4 tsp chicken broth mix, 1 tbsp sugar, 1.5 tbsp fish sauce.
Directions:
1: Cut off tips of chicken feet and soak in cold water for 1 hour (Picture 1), rinse and drain well.
2: Fill a non-stick sauté pan with cold water to about 80% full, on high heat and bring the water to boil. Add chicken feet (Picture 2), and cook at low heat for 12 minutes. Rinse the chicken feet with cold tap water (Picture 3) and then drain thoroughly.

3: Peel off lemon skin and cut into thin strips (Picture 4). Add all ingredients of Ingredient 2 and 3 into a plastic bag (Picture 5).
4: Add cooked chicken feet in the bag (Picture 1), seal and shake to distribute sauce evenly. Chill chicken in fridge for 24-48 hours before serving.
