【Woodears and spirulina salad】

Spirulina contains many essential nutrients for human body, such as B complex vitamins, vitamin E, beta-carotene and high amount of protein. I bought a package of dried Spirulina while visiting in China. This cold salad is a great addition for your party.

Prepare time: 10 minutes
Cook time: 1 minutes
Level: Low
Serves: 4 servings
Ingredients:
1) 10g dried black Chinese fungus (or black woodears);
2) 10g dried spirulina;
3) 2 tsp olive oil, 1 tsp freshly chopped green onion, 1 tsp shredded ginger;
4) 2/3 tsp salt, 1 tbsp balsamic vinegar or dark vinegar, 1 tbsp premium soy sauce, 1/6 tsp chicken broth mix;
5) 1 tsp sesame oil.
Directions:
1: Ahead of time, soak dried black fungus in cold water for a couple of hours (Picture 1), rinse with water and drain. Soak dried spirulina in cold water for 10 min (Picture 2), rinse with water and drain, set aside.
2: Non-stick deep sauté pan on high heat, add 2 cups cold water, cover with the lid and bring to boil, add black fungus (Picture 3), cook for 3-5 min. Rinse the black fungus with cold tap water and then drain thoroughly. Put in a mixing bowl.
3: Add spirulina in boiling water and cook for 1 min (Picture 4), rinse with cold water and drain thououghl. Put the spirulina to the same mixing bowl.

4: A non-stick sauté pan on medium heat, add 1.5 tsp olive oil. Saute chopped green onion and minced ginger (Picture 5) for 30 seconds. Pour it over the cooked black fungus and spirulina. Add all ingredients of Ingredient 4) and 1 tsp sesame oilmix well.
5: Serve immediately. This dish can be chilled in a fridge for 2-3 hours in summer days before serving.
