【Tofu in golden sand】

“Golden sand” is just yolks of salted eggs that are mashed and stir fried into a unique sauce. Tofu is very plain, but with this salty egg sauce, it is very tasty.

Prepare time: 10 minutes
Cook time: 10 minutes
level: low
Serves: 6 servings
Ingredients:
1) 1 container tofu 900g;
2) 3-4 cooked salted egg yolks, my salted egges are small so I used 4 yolks;
3) 2.5 tbsp Avocado oil or other cooking oil, 1 tbsp freshly chopped green onion;
4) 1 tbsp primum soy sauce, 1/8 tsp ground white pepper, 1/6 tsp chicken broth mix, 1/3 tsp salt (taste to add);
5) ½ tsp sesame oil .
Directions:
1: Cut each tofu block horizontally into three equal portions (Picture 1) and steamed egg yolks (Picture 1) for 10 minutes until fully cooked, set aside.
2: Non-stick sauté pan on medium-high heat, add 2 tbsp oil. Arrange tofu in the pan (Picture 3), and cook until golden brown on both sides. Remove from heat and set aside..

3: Heat 0.5 tbsp oil in the same pan over medium-low heat. Sauté chopped green onion for 30 seconds (Picture 4). Add salted egg yolks, mash the egg yolks with spatula while stir and cook for 1-2 minutes until form bubbles (Picture 5).
4: Add cooked tofu pieces, gental stir a few times, add all ingredients of Ingredient 4), stir to mix (Picture 6).
5: Add ½ tsp sesame oil, gently stir a few times, transfer to a serving plate and serve.
