A lovely, tasty and healthy vegetable dish.

Prepare time: 10 minutes
Cook time: 8-10 minutes
Level: low
Serves: 6 servings

Ingredients:

1) 1100 g winter melon;
2) 15 small dried Chinese mushrooms;
3) 1.5 tbsp avocado oil or other cooking oil, 2tbsp freshly chopped green onion, 2 tsp freshly minced garlic, 1tbsp Lee Kum Kee chill bean sauce;
4) 1 tbsp premium soy sauce, ¼ tsp salt, 1/4 tsp chicken broth mix;
5) 1 tsp sesame oil.

Directions:
1: Ahead of time, soak dried mushrooms in cold water for a couple of hours, wash with water and drain. Peel off skin of winter melon and remove seeds, dice into 3x3x0.3 cm pieces (Picture 1).
2: Heat 1.5 tbsp oil in a pan over medium-high heat, add all ingredients of Ingredient 2) (Picture 2), saute for 30 seconds. Then add winter melon pieces and mushrooms, stir to mix (Picture 3). Cover with the lid and cook for 3 minuts.

3: Add all ingredients of Ingredient 4) (Picture 4), stir to mix. Cover with lid and cook for another 3-5 minutes, occasionally stir a few times, until winter melon is cooked.
4: Add 1 tsp sesame oil, mix well. Transfer to a serving plate and serve with some steamed rice.
