金银蛋饺

用料:
1：瘦猪肉馅100克（Costco, extra lean ground pork）。
2：生粉2茶匙，盐1/4茶匙，糖1/2茶匙，素易鲜1/4茶匙，白胡椒粉1/8茶匙，香油2茶匙，万字牌生抽酱油1大匙，水2大匙，葱花2大匙，姜末1茶匙，香油1大匙。
3：鸡蛋白3个，盐1/4茶匙，水2大匙。
4：鸡蛋黄4个，盐1/4茶匙，水3大匙，生粉2茶匙。
5：清鸡汤1/2杯，盐1/8茶匙，生粉1.5茶匙加2大水拌匀，香油1茶匙，葱花2茶匙。
做法：
馅：取一盆，放入1和5料拌匀。用筷子顺一个方向搅拌至馅上劲（图A）。
蛋皮：3和4料（图B），各用筷子打散搅匀。不沾煎锅放油1茶匙，置炉上开中火，将蛋汁各煎成2毫米厚的蛋皮（图C）。
蛋饺：用7厘米直径的圆形模切成蛋饺，中间放上2茶匙肉馅，对折边捏紧（图D）。摆盘上，入笼大火蒸7分钟，蛋饺换到一干净盘上。小锅放入清鸡汤1/2杯，置炉上开大火煮滚，下余下5料拌匀煮成芡汁淋到蒸好的蛋饺即可。
