【AirGo- Meat Mooncake 】

This homemade puff pastry style meat filling Mooncakes are certainly worth the efforts. The wrap is made with avocado oil instead of butter or lard, but it is light and flaky. Ingredients:
Dough:
1) 2 cups unsifted all-purpose flour (320 g);
2) 6 tbsp avocado oil (64g), ¾ cup water (180 g);
Oil paste
3) 1 cup+5 tbsp unsifted cake & pastry flour (190g), 1/2 cup avocado oil (100g).
Filling:
4) 320g lean ground pork;
5) Preserved bamboo shorts 1 package (180g), finely chopped;
6) 2 tsp corn starch, 1/2 tsp salt, 1/6 tsp chicken broth mix, 1/6 tsp white pepper powder, 1 tbsp sesame oil, 1 tbsp premium soy sauce, 1 tbsp light soy sauce, 1/6 tsp sugar, 2 tbsp cold water;
7) 2 green onion finely chopped;

8) 2×1.5 tbsp avocado oil.
Directions:
1: Dough: Combine all ingredients of Ingredient 1) – 2) in a container (Picture 1) to form soft dough. Knead a couple of minutes to form smooth dough (Picture 2). Cover with food wrap and let it stand for 20 minutes.
2: Oil paste: Combine all ingredients of Ingredient 3) in a small container (Picture 3). Mix well with a spoon (Picture 4), set aside.

3: Filling: Combine all ingredients of Ingredient 4) – 7) in a bowl (Picture 5), this is the bamboo shorts that I use this time (Picture 6). Stir in one direction with a pair of chopsticks for 2 minutes until the mixture becomes sticky, set aside.
4: Rub some cooking oil on both hands and on working surface. Knead the dough a few times and divide into 20 small equal portions. Roll out each portion into an oval about 10 cm long, and smooth on 1/20 of oil paste (about 1.5 tsp) (Picture 9). Fold the bottom third up and the top third down (Picture 10). Turn 90 deg., press down and roll out into a 4×12 cm rectangle (Picture 11). Again, fold the bottom third up and the top third down (Picture 12).

5: Roll the dough out into a 12×16 cm rectangle (Picture 13). Fold from left to right to form a slender roll (Picture 14). Roll from bottom to top (Pictures 15). Cover with food wrap while working on the remaining 19 portions.
6: Press down the dough and roll out into a 10 cm circle (Pictures 16). Place 1.5 tbsp filling on the center of the wrapper (Picture 17), seal the edges (Picture 18). Turnover on the surface and press down to a 6-7cm discs (Picture 19). Repeat for the remaining 19 portions.

7: Plugin the 【AirGo】cooker, use “Function” to select the “Crepe/Naan” program, set temperature to 400F and time to 16 min. press “start” to initiate the program. Open the lid, brush the pot with 1.5 tbsp oil, arrange 10 mooncakes inside the pot (picture 20), then close the lid.
8: When only 5-6 min cooking time left (or upon when beeping), open the lid, turn over the mooncake (picture 20), close the lid and let the program to finish.
9: When the program ends, open the lid, transfer cooked mooncakes to a serving plate and serve warm. Repeat for the remaining mooncakes.
