【AirGo- Vermicelli and scallop in chili black bean sauce】

Serves: 6 servings
Ingredients:
1) 1 bag frozen scallops (454g);
2) 2 small packages of (68g) dry mung bean vermicelli;
3) 2 tbsp chili oil, 1tbsp chopped green onion, 2 tsp minced garlic, ½ tsp ground Sichuan peppercorn, 1tbsp dried red chili pepper flakes, 1 tbsp fermented black bean sauce;
4) 2/3 tsp salt, 1/4 tsp chicken broth mix, 1tbsp light soy sauce, 1 cup cold water;
5) 1 tsp sesame oil .
Directions:
1: Place frozen scallops in cold water to thaw (Picture 1), rinse and drain well. Also rinse scallops and drain well (Picture 2). Soak mung bean vermicelli in boiling water for 5 minutes (Picture 3), drain and set aside.
2: Plugin the 【AirGo】cooker, use “Function” to select the “Air Fryer” program, set temperature to 420F and time to 10 min. press “start” to initiate the program. After preheat is done, add 2 tbsp chili oil and all other ingredients of Ingredient 3) (Picture 4), stir a few times. Close the lid and let the program continue.

3: After cooking 1 minute, open the lid and add soaked vermicelli and stir a few times (Picture 5). Add all ingredients of Ingredient 4), stir to mix (Picture 6). Close the lid and let the program to finish.
4: When the first program ends, open the lid and add scallops, stir to mix (Picture 7) and close the lid. Use “Function” to select the “Base Heat” and select 350F and 6 minutes, press “start” to initiate the program.
5: When only 1 minute cooking time left (or upon when beeping), open the lid, add 1 tsp sesame oil, stir a few times and then close the lid, let the program to finish.
6: When the program ends, transfer cooked dish to a serving plate and serve warm with steamed rice.
