【AirGo- Red bean raisin sticky rice cake 】

Sticky rice cake is one of my childhood desserts. I love AirGo’s Oven function, compare to regular oven, it uses less time, convenient and very good to use in the summer time without increase the temperature of the Kitchen. To purchase go to: AirGo cooker, with a coupon of maomao25 for $25 off.

Prepare time: 10 minutes
Cook time: 32 minutes

Serves: 12 servings
Ingredients:
1) Half package of glutinous rice flour (200g), 1/3 cup (70g) lakanto, ½ tsp baking powder;
2) 1 extra large egg, 1 cup -2 tbsp milk (210g), 1.5 tbsp avocado oil or corn oil, 2.5 tbsp condensed milk (50g);
3) ½ cup cooked red bean paste (150g);
4) 2 tbsp raisin (25g):
Others:
5) 9” baking dish, Pam spray.
Directions:
1: Measure glutinous rice flour, lakanto sugar and baking powder in a medium size bowl (Picture 1) and mix well. Combine all ingredients of Ingredient 2) in a container and beat well (Picture 2).
2: Add liquid to the flour (Picture 3) and mix well until no dry flour lumps (Picture 4). Add red bean paste and raisin (Picture 5) and mix well.

3: Spray the baking dish with Pam spray and pour the batter to the baking dish (Picture 6).
4: Plugin the 【AirGo】cooker, use “Function” to select the “Oven” program, set temperature to 375F and time to 28 min. press “start” to initiate the program. After preheat, open the lid, put the baking dish inside, careful not to burn your hand. Then close the lid (Picture 7) and let the program continue.
5: When the program ends, use “Function” to select the “Broil” 350F and 4 min. When the second program finishes, open the lid, take out the baking dish. Let it cool for 10 min. then cover with food wrap (Picture 8) for 4 hours. Then loose the sticky rice cake with a spatula and cut to 1 inch squares and serve with some tea.
Note: Rice cake can be stored in air tight container for 2 day at room temperature.
