【Chicken with savory and spicy sauce】

This is a wonderful cold dish. Just one bite, surely you will reach for more.

Serves: 6 servings
Ingredients:
1) 1 cornish hen 1000g;
2) 1 green onion cut to 1-inch long pieces, 10g fresh ginger sliced, 1 tsp Sichuan peppercorns, 1 tbsp cooking wine, 1.5 tsp salt;
3) 1 tbsp olive oil, 1 tbsp freshly minced garlic, 1 tbsp finely chopped green onion, 1 tsp minced ginger root, 1 tsp Paprika (McCormick), 1/2 tsp Sichuan peppercorn powder;
4) 3 tbsp water, 1 tbsp premum soy sauce, 1 tsp black vinegar, 1 tsp salt, 1 tsp sugar, 2 tsp sesame oil, 2 tbsp chili oil;
5) 1 tbsp sesame seeds, 1 tbsp roasted peanuts crushed, 1 tsp finely chopped green onion.
Directions:
1: In a large pot, add 8 cups water and all ingredients of Ingredient 2) (Picture 1) and bring to a boil. Put the chicken into the boiling water (Picture 2), reduce to low heat and cover the lid (Picture 3), simmer for 30 minutes.
2: In a large container, add half ice and half cold water. Transfer the cooked chicken into this cold water bath (Picture 4) for 30 minutes.

3: non-stick sauté pan on medium-high heat, add 1 tbsp olive oil, sauté chopped green onion, minced garlic and ginger of Ingredient 3) for 30 seconds (Picture 5). Add paprika and Sichuan peppercorn powder, sauté for 20 seconds (Picture 6). Remove from the heat and transfer the contents to a small bowl. Add all ingredients of Ingredient 4), mix well.
4: Roast sesame seeds in a small non-stick pan over medium until light yellow (Picture 7). Cut the chicken into small pieces (Picture 8) and place on a serving plate. Pour the sauce over the chicken, scatter the roasted sesame seeds, crushed peanuts and 1 tsp finely chopped green onion before serving.
