I like CostCo’s organic chicken breast, just a simple stir fry with Chinese celery, it tastes great.

 Chinese celery and Chicken breast stir fry
Prepare time: 10 minutes
Cook time: 6 minutes
Level: low
Serves: 4 servings

Ingredients:
1) 450g Chinese celery;
2) 175g organic chicken breasts, 1/4 tsp salt, 1 tsp corn starch, 1/8 tsp ground white pepper, ¼ tsp sesame oil;
3) 4 tsp olive oil or other cooking oil, 1 tbsp freshly chopped green onion, 1 tsp minced garlic, 1 tsp spicy hotpot sauce;
4) 1 tbsp premium soy sauce, 1 tbsp Lee Kum Kee oyster sauce, ¼ sugar, 2 tbsp water;
5) 1/2 tsp sesame oil.

Directions:
1: Remove roots of the celery, wash and cut into 1 cm pieces (Picture1). Rinse chicken breast with water and drain. Remove white membrane from chicken breast and cut into 0.8 cm cubes. Massage the chicken pieces for 1-2 minutes to tenderize them. Add 1/4 tsp salt, 1 tsp corn starch and ¼ tsp sesame oil, mix well (Picture2).

2: A non-stick pan on medium-high heat, add 2 tsp oil, sauté chicken pieces for about 1-2 minutes (Picture3), and transfer to a plate, set aside.
3: On high heat, add 2 tsp oil to the pan, add 1 tsp spicy hotpot sauce (Picture 4), chopped green onion and minced garlic, sauté for 10 seconds (Picture 5). Add celery (Picture 6), sauté a minute.

4: Then add all ingredients of Ingredient 4) (Picture 7), continue stir and cook until celery just cooked. Add cooked chicken cubes (Picture 8) and ½ tsp sesame oil, mix well. Transfer to a serving plate and serve warm.
