【Shallot egg and shrimp stir fry】

Shallot really makes this egg and shrimp stir fry very tasty. It is a quick and easy dish for your busy schedule.

Cook time: 6-7 minutes
Level: low
Serves: 5 servings
Ingredients:
1) 1 package 16-20 size frozen deveined shrimps (500g);
2) 1/2 tsp salt, 1/6 tsp ground white pepper, ½ tsp sesame oil;
3) 2 shallots (140g);
4) 5 extra large eggs (only keep 3 egg yolks), 1/4 tsp salt, 1/6 tsp chicken broth mix, 1 tsp premium soy sauce, 3 tbsp freshly chopped green onion;
5): 3 tsp olive oil.
Directions:
1: Place shrimps in cold water to thaw (Picture 1), remove shells, rinse and drain well. Combine shrimps and all ingredients of Ingredient 2) (Picture 2), mix well and set aside for 15 minutes.
2: Remove skin of the shallots, rinse and cut into small pieces (Picture 3). Place all ingredients of Ingredient 3) in a bowl (Picture 4), beat well and set aside.

3: Heat 1 tsp olive oil in a non-stick sauté pan over medium-high heat, add shrimps (Picture 5) stir and cook for 1-2 minutes until the color of shrimps just turns pink and transfer cooked shrimps to a plate.
4: Add 2 tsp olive oil to the pan, sauté diced shallots for 1-2 minutes (Picture 6), pour in beaten egg mixture (Picture 7), and cook for 30 seconds. Add cooked shrimps (Picture 8), gently stir a few times until egg just start to solidify, transfer to a serving plate and serve warm.
