【Shrimp and egg stir fry】

This is a delicious and high protein dish, with only use of 2 tsp olive oil.

Cook time: 3 minutes
Level: low
Serves: 5 servings
Ingredients:
1) 1 package frozen deveined white shrimps (454g);
2) 1/3 tsp salt, 1/8 tsp ground white pepper
3) 4 extra large eggs (only keep one egg yolk), 1/3 tsp salt, 1/6 tsp chicken broth mix (optional), 1.5 tsp freshly minced ginger, 1 tbsp balsamic vinegar;
4) 2 tsp olive oil, 1.5 tbsp chopped green onion.
Directions:
1: Place shrimps in cold water to thaw (Picture 1), remove shells, rinse and drain well. Combine shrimps with all ingredients of Ingredient 2) in a bowl (Picture 2), mix well, set aside for 10 minutes (Picture 3).
2: Place all ingredients of Ingredient 3) in a bowl (Picture 4), beat well (Picture 5).
3: Heat 1 tsp oil in a sauté pan over medium-high heat, 0.5 tbsp chopped green onion (Picture 6).

4: Add shrimps (below Picture 1) stir and cook for 1-2 minutes until the colour of shrimps just turns pink (below Picture 8). Pour in beaten egg mixture (below Picture 3), cook for 30 seconds, gently stir a few times until egg just start to solidify (below Picture 4), transfer to a serving plate and serve.
