【White woodear dates lotus seeds and lily bulb soup】

This is another one of lovely soup desserts enjoyed by many Chinese people. It is believed that eating this soup during the cold winter season helps maintain good health.

Prepare time: 10 minutes
Cook time: 11 hours
Level: Easy
Yield: 10 servings
Ingredients:
1) 2-3 dried white woodear mushrooms (30g);
2) 1/3 cup (70g) dried lotus seeds, germ removed;
3) 5-6 slices of dried Chinese yam (Dioscorea opposite) (20g);
4) 6 Hetian dried premium dates;
5) ¼ cup edible dried lily bulb;
6) 1/2-3/4 cup sugar or honey.
Directions
1: Soak dried white woodear and dried lily bulb in cold water separately for about 2 hours (Picture 1). Break woodear into small pieces, rinse and drain. Rinse and drain lily bulb and set aside.
2: At night, place woodear, lily bulb, rinsed lotus seeds, dried Chinese yam and dates (Picture 2) inside 7-in-1 InstantPot pressure cooker and fill with cold water to the 10-cup mark (Picture 3). Cover the lid and place the pressure valve to “Seal” position. Press “Slow cook” button and set 11 hours of cooking time (Picture 4).

3: Next morning, when the program is done, release the pressure of the InstantPot and open the lid. Add sugar, mix well before serving. If you don’t like to use sugar, you can use honey or just eat the soup without sugar.
