【Green beans stir fry】

A nice and easy to make dish, it goes very well with some steamed rice.

Prepare time: 15 minutes
Cook time: 10 minutes
Stand time: 20 minutes
Level: Low
Serves: 6 servings
Ingredients:
1) 100g pork tenderloin, 1/6 tsp salt, 2 tsp corn starch, 1 tbsp water;
2) 400g green beans, ¼ dry black woodears;
3) 2 tbsp olive oil, 1 tbsp freshly chopped green onion, 1 tsp sliced ginger, 1 tbsp freshly minced garlic, 1 hot chilli, chopped;
4) 1 tbsp light soy sauce , 1 tbsp primium soy sauce, 1 tbsp dark soy sauce, 1/4 cup water, 1/4 tsp sugar, 1/6 tsp salt, ¼ tsp chicken broth mix , 1/8 tsp ground white pepper;
5) 1 tsp sesame oil.
Directions:
1: Slice pork tenderloin then cut into shreds. Rub on the rest of ingredients of Ingredient 1) for 1-2 minutes then set aside for 20 minutes (Picture 1). It will taste better if the pork meat is marinated overnight. Cut flat beans into 1-inch long pieces. Ahead of time, soak dried black woodears in cold water for a couple of hours, rinse with water and drain (Picture 2), set aside. Remove both ends of green beans, wash with water (Picture 3) and drain
2: Heat 1 tbsp olive oil in a non-stick sauté pan over high heat. Sauté the pork shreds until outside turns white (Picture 4). Transfer cooked pork shreds onto a plate, set aside.

3: Heat 1 tbsp olive oil in the same non-stick sauté pan over high heat, sauté chopped green onion, sliced ginger and garlic for 30 seconds (Picture 5). Add beans, stir and sauté for a minute (Picture 6). Added woodears, stir and cook for another minute (Picture 7).
4: Add all ingredients of Ingredient 4), cover with a lid, reduce to medium heat and simmer for 5 minutes, stir occasionally. Open the lid, bring heat to medium-high to reduce sauce until about 2 tbsp liquid left (Picture 7). Put back cooked pork shreds and 1 tsp sesame oil , stir and cook for another minute, then transfer to a serving plate, serve with some steamed rice.
