【Braised potatoes in Soybean Paste】

You should try this all vegetable dish, amazingly good.

Cook time: 10 minutes
Level: Low
Serves: 3 servings
Ingredients:
1) 12 small potatoes (320g);
2) 1 tbsp olive oil, 1 tbsp freshly chopped green onion, 2-3 slices of ginger, 1 tbsp chili bean paste;
3) 1/2 tsp sugar, 1 tbsp light soy sauce, 1 tbsp premium soy sauce, 1/4 cup water, 1/4 tsp chicken broth mix;
4) 1/2 tsp sesame oil, ½ tsp dark vinegar.
Directions:
1: Peel off potato skin (Picture 1), rinse and pat dry with a paper towel. (You can leave the skin on if you prefer). Cut into think slices (Picture 2).
2: Heat 1 tbsp olive oil in a non-stick sauté pan over medium-high heat, sauté chopped green onion, sliced ginger and chilli bean paste for 30 seconds (Picture 3). Then add sliced potatoes, stir and cook for 1 minute (Picture 4).

3: Add all ingredients of Ingredient 3) and bring to a boil, cover with lid and simmer for a few minutes at medium-low heat (Picture 5), stir occasionally.
4: Remove the lid and continue cook on medium-high heat until the sauce is reduced down to about 1 tablespoon (Picture 6). Add 1/2 tsp sesame oil and ½ tsp dark vinegar, stir to mix. Transfer to a serving plate and serve immediately.
