Ingredients:
Dough:
1) 1 cup all purpose flour (160 g), unsifted and packed;
2) 1/3 cup+1tsp boiling water (85g), 4-5 tsp cold water (20-25 g);
3) 1 tsp corn oil;
Oil paste:
4) 2 tbsp unsifted all purpose flour (20g), 1.5 tbsp corn oil (20g);
Others:
5) 2×1/3 tsp salt;
6) 2×1/6 tsp chicken broth mix;
7) 2x 1tbsp chopped green onions;
8) 2×1 tbsp corn or vegetable oil.
Directions:
1: Dough: Pour boiling water into the Ingredient 1) flour in a bowl while stirring, then add cold water and combine to form a dough (Picture 1). Add 1/2 tsp corn oil, knead for a minute to form a smooth dough (Picture 2). Spread ½ tsp corn oil on the dough and cover with a damp cloth or plastic wrap (Picture 2) and set aside in a warm place for 2 hours.
2: Oil paste: Combine all ingredients of Ingredient 4) in a small container, mix well with a spoon (Picture 3) and set aside.
3: On a light floured working surface, divide dough into 2 equal portions. Roll out each portion into a rectangle about 1 mm thick, smooth on 1/2 of oil paste (Picture 4) and spread evenly. Scatter 1/3 tsp salt, 1/6 tsp and 1 tbsp chopped green onion evenly (Picture 5). Fold from left to right to form a slender roll then roll from one end to form circle (Pictures 6). Cover with food wrap to rest for 20 minutes. Press down the dough and roll out into a 20 cm circle (Pictures 7)
4: Plug in the Ropot cooker, press Power button to preheat the cooker. Add 1 tbsp oil to the flat bottom inner pot (Picture 8). Place one pancake inside (Picture 9), close the lid, press Function to select Panfry function. When 3 seconds count down finishes, press – sign and decrease time to 2.5 minute, program starts.
5: When the program ends, open the lid, turn over the pancake (Picture 10), close the lid. Press Function to select PanFry again, when 3 seconds count down finishes, press – sign and decrease to 2.5 minutes.
6: When the program ends, open the lid, transfer cooked pancake to a serving plate, cut and serve immediately.
