
Red Bean Pudding

Ingredients:
1: Red beans ¾ cup, cold water 2 cups.
2: Sugar ¾ cup, cold water 3-4 cups.
3: Gelatin 2 package, equivalent of 2 tablespoons。
Cooking directions:
Rinse red beans with water and put red beans in a small pot with 2 cups water on high heat and bring to boil, simmer on low to medium heat for an hour until the beans are cooked and water is evaporated. Cool a few minutes and use a blender to blend cooked beans with 3.5 cups water into fine paste, pour the mashed red beans paste back to the pot, add sugar and gelatine, mix well. On medium heat bring to boil while stir occasionally. Pour the cooked paste into a clean and dry container, cool to room temperature and then refrigerate it for 3 hours until set.
Before cutting, warm the bottom of the container in hot water for 30 seconds and use a cookie cutter to cut into pieces and serve.
