【家常炒米粉】

中国南方盛产稻米，许多地方都有当地特色的米粉菜肴。LG小时候在福州外公外婆身边长大，经常回忆起外婆做的福州炒米粉还有江西米粉干。
今天做的这个炒米粉做晚餐，挺好吃的。爱吃辣的拌上点辣椒酱可以吃上两碗。
1：猪里脊肉300克，盐1/2茶匙，生粉1大匙，水2大匙，老抽酱油2茶匙；
2：细的干米粉一包200克；
3：干香菇10粒，黑木耳一把（8克），干虾米2大匙，分别在水中泡软洗净待用；
4：胡萝卜1小根50克，去皮洗净待用；
5：小青菜菜心400克，洗净切段待用；
6：橄榄油3大匙，葱花2大匙，蒜蓉1大匙，姜丝1茶匙；
7：鱼露1.5大匙，盐1茶匙，万字牌生抽酱油1.5大匙，头抽酱油1大匙，鸡粉1/4茶匙，十三香粉或白胡椒1/6茶匙；
8：香油2茶匙。
注：1大匙Tablespoon =15毫升，1茶匙Teaspoon =5毫升，1杯Cup=240毫升。
做法：
1、提前一天晚上将猪肉切丝，拌上所有剩余的1料，用手抓捏均匀（图1），保湿放冰箱过夜。
2、米粉用开水浸泡30分钟（图2），沥干水待用。
3、青菜心洗好切段，胡萝卜切片，香菇黑木耳切丝。不粘锅置炉上开大中火，加2大匙橄榄油，放入肉丝（图3）炒至八成熟，捞出待用。
5、倒入炒好的肉丝（图8），翻炒均匀。关火后放入2茶匙香油拌匀即可。
