【糖醋小肉丸】

周末买了些全瘦的火鸡肉糜,做这个糖醋小丸子,没有用油炸,健康又美味。

用料:
1:瘦的火鸡肉糜275克;
2:厨酒1茶匙,盐1/3茶匙,糖1/4茶匙,老抽酱油 1大匙, 鸡粉1/4茶匙,香油1茶匙,生粉2茶匙,水1.5大匙,葱花1大匙,姜蓉1/4茶匙;
3:橄榄油1大匙,葱一根切段,姜2-3片;
4:生抽酱油1大匙,老抽1大匙,米醋1大匙,糖1.5大匙,水4大匙,盐1/6茶匙;
5:生粉1茶匙,水1大匙,拌匀。
注:1大匙Tablespoon =15毫升,1茶匙Teaspoon =5毫升,1杯Cup=240毫升。
做法:
1、所有1料和2料放入一盆中(图1),用一双筷子顺一个方向搅拌至少100下,至馅发粘上劲(图2)。
2、中号锅装大半锅水,煮滚后调中小火,用一小汤勺先沾下水,舀出大约2茶匙肉馅,右手持勺,与左手掌配合,搓成直径1.5厘米的小丸子放入滚水里(图3),依次做好所有丸子。中火煮几分钟至丸子漂浮至水面(图4),离火待用。

3、不粘锅加1大匙橄榄油,置炉上开大中火,放入3料里的葱段和姜片炒香(图5),然后放入所有4料煮滚(图6)。
4、将肉丸子捞出,放入不粘锅里,与糖醋汁炒匀,然后放入5料生粉水兜匀,煮滚至汁浓稠离火即可。
