酱焖鸡丁

用料:
1:鸡腿4根400克,洗净去骨切小块,加万字牌生抽酱油1大匙,生粉1大匙,绍酒1大匙,拌匀腌20分钟。
2:西芹1片50克,洗净切小粒。
3:辣豆瓣酱2大匙,绍酒1大匙,万字牌生抽酱油1大匙,水3大匙,盐1/4茶匙,糖2茶匙,镇江香醋2茶匙。
4:橄榄油3大匙,蒜末1大匙,姜末2茶匙。
做法:
不沾锅放油2大匙,置炉上开中火,冷油放入鸡肉炒至肉变色捞出(这样炒出的鸡肉超嫩滑)。原锅再加油1大匙,置炉上开大中火,放入蒜末姜末和辣豆瓣酱炒香,然后放入炒过的鸡肉翻炒几下,接着依次放入剩余的3料,炒至汁浓(大概1.5分钟),放下西芹丁兜匀出锅。
