【麻辣肉丁】

这周小里脊有便宜卖就买了一盒，做了这个麻辣肉丁，肉片超级嫩又好味道，很容易做的一道菜，大家可以试试。
用料:
1：小里脊肉一条480克：
2：料酒1大匙，生抽酱油1大匙，头抽酱油1大匙，老抽酱油1大匙，生粉2茶匙，香油1/2茶匙，盐1/4茶匙；
3：西芹3片（180克）；
4：熟腰果仁50克；
5：牛油果油 或其他食用油1.5大匙，辣油1大匙，姜丝1茶匙，葱花1大匙，干辣椒6-12个（看你吃辣的程度），花椒粉1/4茶匙；
6：盐1/6茶匙；
7：辣酱油膏1大匙，香油/2茶匙；
注：1大匙=15毫升=1 Tablespoon，1茶匙=5毫升=1 Teaspoon，1杯=240毫升。
做法：
1、里脊肉洗净去掉白膜切丁，放入所有2料（图1），用手抓捏2-3分钟（图2），静置10分钟。西芹洗净切丁待用.
2、不粘锅置炉上开大中火，加1.5大匙牛油果油或其他炒菜用油及辣油1大匙，放入姜丝，葱花，干辣椒及花椒粉炒香（图3），倒入芹菜丁翻炒几下，加盐1/6茶匙炒匀（图4）。
3、下肉丁（图5）炒至肉丁快熟，加腰果仁，及7料（图6），兜炒均匀出锅。
