【红烧鸭】

领导在Costco 拎回来一只嫩鸭居然有3公斤重, 肥油不少, 全给我切掉了. 这样红烧, 鸭子不腻, 非常好吃.

用料:
1:嫩鸭一只3000克;
2: 牛油果油 或其他炒菜油1.5大匙, 葱2条, 姜10克.
3: 生抽酱油2大匙, 头抽酱油1大匙, 老抽酱油1大匙, 葡萄醋1大匙, 鸡粉1/4茶匙, 罗汉果糖1大匙;
4: 水2杯;
5: 香油 1茶匙.
注:1大匙Tablespoon =15毫升,1茶匙Teaspoon =5毫升,1杯Cup=240毫升。
做法:
1、鸭子洗净去掉多余的肥油, 斩块。葱去掉根洗净切段, 姜切片.
2、锅置炉子上, 大中火, 加油及2料葱及姜片炒30秒,放入鸭块(图1)炒至没有什么水(图2), 至焦香.

3、放入所有3料(图3)及2杯水, 炒匀煮开. 盖上锅盖, 调小火焖1小时, 间中炒几下(图4), 至鸭肉软烂.
4、淋下香油 1茶匙,兜匀就可以出锅了。
