香煎鲜虾芋饼

用料:
1：冰冻带壳虾300克，去肠去壳洗净沥水切小粒，盐1/3茶匙，白胡椒粉1/8茶匙，生粉1大匙，水1大匙，香油2茶匙拌匀腌20分钟。
2：芋头350克，去皮洗净切细丝。
3：盐1茶匙，白胡椒粉1/8茶匙，鸡精1/4茶匙，生粉2大匙，鸡蛋1只，葱两条切葱花。
4：菜籽油4大匙。
做法：
取一盆，放入芋头丝和盐1茶匙，用手抓捏均匀，然后放所有剩余的3料及2料拌匀，用双筷子顺一个方向搅拌至馅上劲有些粘稠（图A）。
不沾煎锅置炉上开中火，放2大匙菜籽油，将鲜虾芋头馅分成12份，每份用手捏挤成饼状，6个一齐下锅里煎黄，然后翻转一面，煎黄另一面即可（图B）。余下的馅如上一样操作，煎好乘热吃，香及了。
