多滋味-【牛肉炒蚕豆】

亲们一定要试试这个牛肉炒蚕豆，牛肉好滋味，是下饭的好菜。
用料:
1：牛肉330克（牛腩排flank steak），厨酒1茶匙，盐1/3茶匙，生粉1茶匙，水1大匙；
2：蛋清半个；
3：蚕豆仁130克；
4：橄榄油4大匙，蒜蓉2茶匙，姜丝1.5茶匙；
5：厨酒1茶匙，盐1/4 茶匙，水4大匙， 生抽酱油 2茶匙，头抽酱油1茶匙，糖1茶匙，白胡椒粉1/8茶匙，金兰酱油膏1大匙；
6：葱花1茶匙。
注：1大匙Tablespoon =15毫升，1茶匙Teaspoon =5毫升，1杯Cup=240毫升。
做法：
1、牛肉洗净沥水，切薄片（图1），放入剩余的1料（图2），用手抓捏均匀，然后放入半个蛋清拌匀，静置20分钟。
2、开大火将不粘锅烧热（大约1-2分钟），加3大匙橄榄油，立即放入牛肉片（图3），快速划散肉片，炒至八成熟（图4）。
3、原锅置炉上开大火，加1大匙橄榄油，炒香4料里的蒜蓉与姜丝（图5）。放入蚕豆仁翻炒几下（图6），再下5料里的厨酒和盐炒匀，然后放入4大匙水，煮至蚕豆仁断生（图7）。
4、放入剩余5料翻炒几下（图8），然后放入牛肉及1茶匙葱花（图9），翻炒兜匀出锅。
