【蚕豆炖素鹅】

江南人对茭白竹笋蚕豆之类好像都有情结,毛毛爸和我看到了这类菜就是要买的。一大包的蚕豆居然只剥到1杯蚕豆仁,就和素鹅一起炖了,解馋的同时又想起国内的亲人。

1:素鹅一盒400克;
2:新鲜带荚蚕豆665克;
3:橄榄油1.5大匙,葱1条洗净切段,姜2-3片,蒜3-4粒拍碎,八角1粒,丁香2粒;
4:厨酒2茶匙,水3/4杯,盐2/3茶匙,糖1.5茶匙,头抽酱油 1茶匙,生抽酱油2茶匙,鸡粉1/4茶匙;
5:香油1/2茶匙。
注:1大匙Tablespoon =15毫升,1茶匙Teaspoon =5毫升,1杯Cup=240毫升。
做法:
1、素鹅洗净沥水,切薄片(图1)。蚕豆剥去皮,蚕豆仁洗净待用(图2),那么多蚕豆只剥出1杯蚕豆仁。不粘锅加1.5大匙橄榄油,置炉上开大中火,炒香葱姜蒜(图3),再下八角和丁香炒匀。

3、开大火收汁后,放1/2茶匙香油,翻炒均匀即可。
