【圣女果鸡蛋炒虾仁】

在Costco买了盒圣女果,非常新鲜好吃。用它来个鸡蛋炒虾别有风味,值得一试。

用料:
1:冰冻中号白虾30个,盐1/2茶匙,白胡椒粉1/6茶匙,生粉1茶匙,香油1/2茶匙;
2:圣女果(樱桃西红柿)20个;
3:鸡蛋3个,盐1/2茶匙,鸡粉1/6茶匙,水1大匙;
4:牛油果油或橄榄油2大匙,葱花2大匙;
5:头抽酱油1茶匙,黑胡椒1/8茶匙,红糖1/2茶匙;
6:香油1茶匙。

注:1大匙=15毫升=1 Tablespoon,1茶匙=5毫升=1 Teaspoon,1杯=240毫升。

做法:
1、将冰冻虾放半池子冷水里解冻,去壳去肠洗净,放入一碗里,加所有1料(图1)抓捏1分钟拌匀,静置10分钟。樱桃西红柿洗净一切两半待用(图2).
2、鸡蛋同剩余3料放一碗中打散待用。不粘锅加1大匙牛油果油或橄榄油,置炉上开大中火,放入虾仁(图3),炒至7成熟盛出。

3、原锅再加1大匙油,放入1大匙葱花(图4)炒香,然后放入切半的樱桃西红柿及所有5料(图5)炒一分钟,将打散的蛋汁(图6)倒入锅里(图7)。
4、待蛋液底部开始凝固后,放入虾仁,用铲子轻轻翻炒均匀至蛋液刚刚凝固(图8),下1茶匙香油,炒匀就可以盛出入盘子上桌了。
