【抹茶凉粉】

天热了做碗凉粉吃，抹茶凉粉也很好吃。
用料:
1：纯绿豆淀粉1/2杯，抹茶粉1茶匙，水3.5杯；
2：牛油果油 1大匙或橄榄油1大匙，葱花1大匙，蒜蓉1大匙，豆豉1茶匙；
3：开水2大匙，辣椒酱1大匙，辣椒油1大匙，葡萄醋2茶匙，头抽酱油1大匙，糖1/2茶匙，生抽酱油1大匙， 鸡粉 1/4茶匙;
5：香油1大匙。
注：1大匙Tablespoon =15毫升，1茶匙Teaspoon =5毫升，1杯Cup=240毫升。
做法：
1、中号饭锅，置炉上开大火，加入1料中水2.5杯，盖盖煮开。绿豆淀粉及抹茶粉（图1）加水1杯拌匀。调中火，边搅拌边倒入淀粉水（图2），搅拌煮开至半透明（图3），离火冷凉。
2、凉透的凉粉（6小时），用刀把周边划一圈倒扣在案板上（图4），倒出切细长条放入碗内。小号锅置炉上开中火，放入2料炒香（图5）关火。依次放入剩余3料及4料拌匀（图6）。
3、将调味汁浇到凉粉上拌匀即可。
