香煎鲜虾芋饼

用料:
1:冰冻带壳虾300克,去肠去壳洗净沥水切小粒,盐1/3茶匙,白胡椒粉1/8茶匙,生粉1大匙,水1大匙,香油2茶匙拌匀腌20分钟。
2:芋头350克,去皮洗净切细丝。
3:盐1茶匙,白胡椒粉1/8茶匙,鸡精1/4茶匙,生粉2大匙,鸡蛋1只,葱两条切葱花。
4:菜籽油4大匙。
做法:
取一盆,放入芋头丝和盐1茶匙,用手抓捏均匀,然后放所有剩余的3料及2料拌匀,用双筷子顺一个方向搅拌至馅上劲有些粘稠(图A)。

不沾煎锅置炉上开中火,放2大匙菜籽油,将鲜虾芋头馅分成12份,每份用手捏挤成饼状,6个一齐下锅里煎黄,然后翻转一面,煎黄另一面即可(图B)。余下的馅如上一样操作,煎好乘热吃,香及了。
